Breakfast Dish Not Egg Scramble
Cooking Time; 15 minutes
Yields 4 Servings
Ingredients
24 oz extra firm silken tofu
2 chopped green onions
1 Tbsp soy sauce
1/4 tsp dry mustard | |
2 Tbsp oil (can be reduced if preferred)
1/4 tsp paprika
1/4 tsp tumeric
salt to taste |
Drain tofu in colander and place in mixing bowl. Add spices and soy sauce and crumble tofu with fork, blending spices in. Add green onions.
Place oil in medium size skillet and heat at medium high setting. Place tofu in skillet. Do not stir. Wait till the edges get a little crinkly. Turn with spatula until partially browned. The trick to this recipe is the silken as opposed to regular tofu, the latter will not give the crinkly effect. Add salt to taste.
