Feeding Time - Main Dish - Rice & Veggies



Main Dish - Rice & Veggies
Serves 4
Cook Time 1 hour

Ingredients

2 cups water
1 cup long grained brown rice
4 tablespoons oil
1/2 teaspoon salt
1 chopped onion
4 minced cloves garlic
Soy Sauce (condiment)
1 cup chopped green beans
2 sliced carrots
1 chopped stalk broccoli
1 sliced zucchini
4 shredded leaves kale
2 cubed tomatoes, with all juice saved

Directions
In medium saucepan, bring to medium boil water with salt, (salt optional). Rinse rice in colander. When water reaches boil, add 1 tablespoon oil. Then add rice and reduce heat to simmer. Cover and let cook 50 minutes.

While it's cooking, slice dice shred etc. the vegetables. Be sure to save all the tomato juice, and keep vegetables seperate from each other.

Twenty minutes before rice is done, place 2 tablespoons oil in large skillet. Heat at medium high setting. Add onions and garlic. Stir until onions are translucent.

Add green beans and carrots. Stir until blended.

Add remaining tablespoon of oil.

Add zucchini and broccoli. Stir again till blended.

Add kale and tomato. Stir again.

Fluff cooked rice with fork and then add to skillet of vegtables. Stir and then cover for 5 minutes.

Feel free to substitute or add other vegetables such as peas, corn, spinach, or okra. Think of it as a tasty potpourri!

Serve with Soy Sauce. Bon Appetit!
