Salad -
Carrot Citrus Salad Makes 4 servings Cook
Time 15 minutes
Ingredients
4 large carrots 2 tangelos or 3 tangerines
1/4 cup vegan mayonaise
Wash carrots and grate into glass bowl. Peel citrus fruit and seperate
segments. On ceramic plate or in glass container cut segments into thirds
or fourths depending on size. We do it this way to save the juice. Combine
1 Tbsp of juice, mayonaise and fruit with carrots and blend gently. It's ready
to serve! Sometimes we add other fruits or vegetables. Our favorites include
cabbage, grated bell peppers, apples, pineapple,
papaya, mango, banana, orange, pears, pomegranate seeds, walnuts, pine nuts, raisens or dried berries. For holidays we sometimes use most of the above to create a very festive look. Enjoy!
