Feeding Time - Main Dish Recipe - Beans



Main Dish - Beans
Yields 4 1/2 cups cooked beans
Cook Time Overnight plus 2.25 hours

Ingredients

3 cups dried beans - any variety. For main dishes try an assortment of
mixed beans such as red, pink, black, pinto. For salads, use kidney,
garbanzo or any of the ones listed for main dishes. Don't try this with
soy beans, soy beans taste yucky and are best used for other purposes.

Water                salt to taste

Check beans and remove any foreign objects. Rinse in a colander and
place in medium size sauce pan. Cover with water, with about 3 inches
of water over the top of them and soak overnight.

Drain and rinse beans, and replace into pot and add enough water to
cover beans by 3 inches. Slowly bring to a simmer and cook at a low
simmer until just tender, about 1 1/2 to 2 hours. Add more water as
necessary to keep beans covered. Salt to taste.

You can add a chopped onion and/or minced garlic cloves for flavor,
or not. For a main dish try a spoonful of vegan sour cream, grated soy
cheese, or your favorite salsa.
